A doctor has offered up their much-loved lunch recipe, which they say has been a game-changer – and it couldn’t be simpler to whip up yourself. Lunchtime can often become a frantic search for whatever’s handy, leaving little time for healthier options.

However, on TikTok, Dr. Divya Sharma (@doctorbowl) has put forward her suggestion for “a doctor’s favourite lunch” that promises to be both tasty and good for you.

“The base of crispy smashed potatoes has transformed my life… you HAVE to make it!” she excitedly suggested in her post, revealing that not only is this dish swift and straightforward to prepare, but it’s also gluten-free and extremely adaptable, ready to be paired with any spare vegetables lying around.

Her culinary creation has already wooed over 425,000 viewers into hitting the ‘like’ button, with many commenters itching to test out the recipe. One chimed in: “Did you just make a quiche with a potato base? ! Genius! ! I’m totally trying this!” Another voiced their eagerness: “Ok fine I’m making this tonight,” while someone else marvelled: “Omg, potatoes as a quiche base? ? ? That’s genius.”

And yet another admirer proclaimed: “This looks insane.”, reports Surrey Live.

There were those who pitched in with their own inventive ideas for the recipe. “Three words: sprinkle of feta.”

Begin by getting your oven warmed up to 200C. In the meantime, cook your potatoes until they’re tender.

Ready a nine-inch dish and add your potatoes, mashing them until they form a layer at the bottom of the dish. Drizzle oil over the potatoes and season with salt and pepper.

Next, introduce the spinach, pepper, and tomatoes. Following this, combine the eggs with the milk and pour this mixture over the vegetables.

Sprinkle cheese on top and bake for 25-30 minutes.
