Bristol is no stranger to a bakery or two and, in fact, us Bristolians can’t get enough of a baked good. But did you know there’s a bakery quite literally ‘on wheels’?
Technically, it’s not that new. On September 30, the man behind the popular four-wheeled bakery on Whiteladies Road rebranded from The Common Lemon to become Hilda. In a post to Instagram, Hilda owner, Will Prosser, posted: “Hi folks, as of today I’m rebranding my business and will trade under the name Hilda from now on.
“Why Hilda? Hilda was my Gran’s middle name. She was an amazing woman who lived life to the full despite the huge challenges she faced. I wouldn’t have been able to start this business without her.
“So Hilda is in some part a dedication to my Gran, but more broadly to family I’ve lost and family I’m so grateful to have, who have given me the platform to do what I love. So, next time you’re on Whiteladies Road, the name on the van will be different but everything else will be the same. Thanks for your ongoing support.”
You can find Hilda parked outside St John’s Court on Whiteladies Road in Clifton Tuesday to Friday, as well as BAWA in Filton on Saturday mornings. In November 2023, The Common Lemon as it was formerly known, closed up shop on Redland Green when his contract came to an end, with Will confirming he’d be “running in a new spot soon”.
Following this, he posted on March 8 that The Common Lemon had a new home on St John’s Court on the corner of Whiteladies Road and Apsley Road. And, since then, he’s been bringing joy to locals with his vast array of freshly made baked goods – from pastries to buns, tarts, shortbreads and more.
On May 5 this year, he shared a throwback which showed his van, or ‘wagon’ as he calls it, before embarking on his ‘baking adventure’. In a post to Instagram, he said: “So much can happen in a year. The last 12 months have brought the saddest most difficult days of my life but, thanks to this baking adventure, also some of the most rewarding and fulfilling.
“Who knows what the next year will bring, but one thing’s for sure, the small wheels of this wagon will keep on turning.”
