The half-term holidays are almost upon us, and whatever you’ve got planned, it’s always nice to kick off the day with a delicious breakfast for the whole family.

Thankfully, it doesn’t have to be a complicated task either, as there are so many easy yet delicious recipes out there that are great for little ones and adults alike.

If pancakes are your breakfast of choice at home but you don’t have time to make them every day, then you’ll want to try these tasty sheet-pan pancakes, which can be prepared ahead of time—perfect for busy mornings.

The recipe was shared on TikTok by @ashleigh.cooks, who boasts more than 117k followers thanks to her easy baby and toddler-friendly dishes that aren’t only tasty but healthy as well.

She said: “If you’re looking for a simple, healthy pancake recipe that’s perfect for the whole family, you’ve come to the right place! These banana and maple syrup pancakes are not only incredibly easy to whip up, but they’re also refined sugar-free, naturally sweetened, and perfect for meal prep.”

Made in one pan with just a handful of fridge and cupboard staples, they’re the perfect half-term breakfast treat – and there’s minimal washing-up involved afterwards, too.

Here’s everything you need to make this recipe, which serves eight.

Sheet pan pancakes recipe

Ingredients

  • One ripe banana
  • 1/4 cup maple syrup
  • One cup milk of choice
  • One tsp vanilla extract
  • Two eggs
  • 1 3/4 cups plain or all-purpose flour
  • One tsp baking powder

Method

First, preheat the oven to 180C/350F fan-forced. Then, put the banana, maple syrup, milk, vanilla extract, and eggs in a blender and blitz until completely smooth.

Meanwhile, grease a 12x8in sheet pan with butter and line it with baking paper. Pour in the contents of the blender and then add the flour and baking powder, stirring with a whisk until everything is combined.

Bake for around 30 minutes until nice and golden, then cut into slices and serve. Each slice will be kept in the fridge for around three days and three months in the freezer.
