Parenting influencer Grace Mortimer ( @_myfirstmeals ) has shared five healthy recipes that cost less than £1 per serving to keep kids happy and full this half term. Each meal varies, meaning kids can have nutritious meals without getting bored of their meals by the end of the week.
With a following of 638k, Mortimer is also a Sunday Times best-selling author, recipe developer and mum of two. She’s best known for her homemade and delicious food content and money-saving tips.
Now, she’s sharing easy, healthy meals ahead of half-term, with all the ingredients coming from Aldi. From Three Veggie Pasta Bake to Creamy Broccoli & Cheddar Soup, these affordable and great tasting dishes will keep the whole family happy for less than £5 per meal.
The recipes have already proven popular with Mortimer’s followers, with one follower commenting: “Perfect timing! Was running out of ideas for this week” whilst another added: “Wow wow! Clever healthy delicious cooking at a great price.”
One recipe shared by Mortimer was her ‘three veggie pasta bake’, which serves four and uses just five ingredients. The meal costs £3.57 in total which works out to just 89p per serving!
The author also shared her recipe for cauliflower curry, again using just five ingredients and coming in at £3.84, or 96p per serving. This recipe also helps kids get in one of their five a day.
Another meal bound to popular with little ones is Mortimer’s fish finger rolls with chips and salad. Using baking potatoes to make the chips at home and adding pre-bagged salad makes this a simple, healthier version of the traditional meal. The total ingredients come to £3.88, and just 97p per serving.
The other recipes shared include broccoli and cheddar soup, and pizza jacket potatoes. If you were to purchase the ingredients for all five meals, you’d be spending just £18.78 for a week’s worth of dinners.
As a busy mum of two, Mortimer shared her tips for keeping meal times during half term fun, affordable and tasty. She said: “Feeding kids can be costly during the school half term but thanks to Aldi’s low prices, you can create tasty meals that won’t break the bank. A few tips I live by include:
- Buy supermarket own brand! A tin of tomatoes is a tin of tomatoes
- You don’t need a million ingredients to make a nice meal
- Eat seasonally as much as you can — there are often good offers on seasonal fruit and veg such as Aldi’s Super Six
- Get the kids involved in the kitchen! If they helped make the meal, they’re more likely to eat it so there’s a good chance you’ll throw away less food and it helps keep them entertained during the half-term.”
