As the new year kicks in, many of us are embracing fresh goals to shape up and eat healthier after indulging during the festive period.

We’ve all heard the NHS advice to get five portions of fruit or vegetables a day – but this can be easier said than done. Thankfully though, an athlete has shared a 15-minute recipe that could make things much easier.

Not only is it packed with plenty of nutrients, it also looks seriously tasty. And the dish we’re talking about is beef tortilla shells, which you can customise according to your own tastebuds.

The recipe was shared on popular recipe page @on.trac5, run by Christian Petracca. He said: “POV: you have 15 mins for a healthy lunch.”

He then takes viewers through the steps to rustling up these vibrant wraps. Start off by boiling a pot of rice and simultaneously browning some beef in a frying pan. Spice things up by throwing in chilli beans if you wish. This dish is also great if you’re looking to repurpose last night’s leftover chilli con carne or rice.

As both components near readiness, take a tortilla and let it nestle in a bowl. Beat an egg, slather it over the tortilla, then blast it in the oven until achieving peak crispiness.

Add your rice and beef into the tortilla shell and sprinkle grated cheese on top. Pop it in the oven for a few more minutes, until the cheese has melted.

After this, finely chop some green pepper, red pepper, and red onion to add on top of your shell. If you’ve got a tin of sweetcorn, chuck some in too.

For those who like it hot, throw in some jalapeno slices for a spicy kick. And there you have it – your tortilla shell is ready to be devoured.
