Are you struggling to keep your vegetable dishes interesting? Food writer and recipe developer Georgie might just have the inspiration you need.
Showcased on TikTok, her latest culinary sensation turns an uncommon ingredient into the “star” of a stunning pasta creation. She opens her video with light-hearted charm, saying: “This is my series where I take a vegetable that is in desperate need of a new PR person.”
Georgie adds: “I give them a little makeover and make you want to eat them – and today I’ve been hired by the swede.” In a step-by-step guide, she demonstrates peeling and dicing the underrated root into perfect cubes, before tossing in olive oil with a pinch of salt and pepper.

Singing the veg’s praises, Georgie continued: “Sadly swede is so overlooked – I don’t think I have ever seen it as a star of a plate”. Georgie placed the swede into a frying pan along with chopped garlic and green beans, before continuing: “It’s my job to change that. It roasts up until buttery and sweet like other vegetables do and its sweetness is really nice paired with something nutty and salty.”
Taking it further, she folds in bucatini – similar to thick spaghetti – along with rich salted butter and finely grated Parmesan for the crowning glory, revealing it melds into a “brown butter pasta sauce” brimming with “loads of sage and garlic”, all topped off with a hearty serving of mozzarella.
“It’s so good,” she said. “And a great way to enjoy the humble swede.” Georgie on her website that the recipe requires 10 minutes of preparation time and 40 minutes to cook. Her video drew a lot of attention from foodies on the platform, one of whom hailed: “Love this! BIG fan of swede at this time of the year! Will be sure to try with sage, thank you.”
Another agreed: “That looks so good – would never have thought of roasting it!” A third user agreed with Georgie, saying: “It really is such a forgotten vegetable. I absolutely love swede but I haven’t had it in YEARS.”
