As the evenings draw in and there’s a pronounced chill in the air, there is nothing as warming and soothing than a gently spiced curry. There are times when I have neither the time nor the inclination to make curry, and I confess that on occasion I have gone down the supermarket ready meal route. It always ends in bitter regret and disappointment . I spend nearly as much time doctoring it with extra spice, citrus and herbs as I would have done making it myself in the first place.
